Campfire Pie
Campfire pie has become one of my family’s favorite summer desserts inspired by the many camping trips my father and his parents took in the 1980’s.
This dessert pairs nicely with one of our favorite passtimes— sitting around the fire. We love to kick back around our Cowboy Cauldron and have a “burn” after dinner. We laugh, listen to our burn playlist and enjoy each others company until the coals dim.
Although they usually bring fires to a close, coals signal it’s time to bring out the ingredients for this fun dessert!
Utensils & Instructions
Pie Iron
Bowl, Forks, Butter Knives
Paper Plates
Bread
Butter
Cooking Spray
Pie Filler (we suggest cherry or peach)
Powdered Sugar
Instructions
In a bowl, pour 1 1/2 cups of powdered sugar.
Open the pie iron and spray both sides with your choice of cooking spray.
Take two slices of bread and spread a pad of butter on one side of each slice with a butter knife. Place the buttered sides face-down on either side of the pie iron.
Open the pie filler and scoop two spoon fulls onto the center of one slice of bread.
Close the pie iron and latch it.
Use the butter knife to slice off any edges that did not fit in the iron.
Over coals, lay the pie iron down flipping the iron every five minutes. I recommend unlatching the iron to check if the pie is done after 1-2 flips. The pie is done when the bread is golden brown.
My family and I love the smokey yet sweet flavor of this dessert and the tradition we get to carry on.
